Matcha Cookies
A few months ago, I was sitting inside my bedroom, just hanging out and absolutely bored. My mind was wandering and thinking about so many things, but my body was the opposite; lazy and not wanting to do anything, It was around 5:30 p.m. on a Sunday evening, and an idea clicked, why don’t I make cookies? The reason I chose cookies was that they’re easy to make and quick, especially considering it was a school night. I remember scrolling through Instagram and seeing pictures of matcha cookies, I was immediately convinced they would taste good, especially when I saw the pretty, bright, green color the matcha gave and the white chocolate chips which stood out, among the green. I ran up to my dad and asked him to get me a few ingredients.
After he left to get the ingredients I started my preparation and set up. Soon after, I started making the batter with all the ingredients, first the dry, and the wet, and then I combined the separately mixed ingredients, and by the time he was back, the batter was ready for the white chocolate chips. I was happy with the way the cookies looked and the beautiful green color that the matcha added. After baking them, everyone was so excited to try them and they all loved them!
The following is the recipe and ingredients I used to make these delightful and tasty matcha cookies, feel free to try the recipe out!
Ingredients
:
All Purpose Flour - 2 cups
Matcha Powder - 1 tbsp
Salt - ½ tsp
Butter - 1 cup
Coconut oil - 4 tbsp
Brown Sugar - 1 cup
Granulated Sugar - ½ cup
Eggs - 1 egg & an egg yolk
White Chocolate Chips - 1 cup (could add more!)
Mine made about 18 medium-sized cookies
Recipe:
Preheat oven to 325 F
Sift the flour, matcha powder, and salt
In a separate bowl, add in the melted butter and melted coconut oil with brown sugar and white sugar, and mix it with an electric hand mixer or stand mixer
Fold in the egg yolk plus a whole egg, and vanilla extract and fold with a spatula
Add in small portions of the dry ingredients at a time, while mixing it with either of the electric mixers
Once the dough is mixed add in the chocolate chips while folding with a spatula
Use an ice cream scooper to scoop the dough and add it to a baking tray covered with parchment paper
Put the tray in the preheated oven and start the timer for 10 minutes
